🔥 It's Fire Prevention Week (October 4–10), and here's something every kitchen operator should know:
A commercial kitchen doesn't run on one fire system. It runs on FIVE. 👇
🔥 Kitchen Exhaust (KEC): grease builds in the duct every service. We measure it in micrometres. When it crosses the threshold, the system gets cleaned and we document what we found.
🧯 Suppression: the hood-mounted system that dumps agent on a flame. Separate service interval, separate tag, separate record.
💧 Sprinklers: building-wide, inspected and tagged on their own schedule.
🔔 Fire Alarm: detectors, pull stations, panels. Another interval, another record.
🪣 Portable Extinguishers: wall-mounted, tagged, inspected on their own clock too.
Every one of those five carries a service tag. Every one is supposed to leave a paper (or digital) record. When an inspector or an insurance adjuster walks in after an incident, they look for all five.
Here's what we see from the roof and the van: kitchens that stay current on KEC sometimes let suppression drift. Kitchens tight on suppression sometimes haven't pulled a grease depth reading in longer than they realise. One system in good shape does not cover a lapse in another.
✅ This is the week to line up all five records and check the dates.
Cleaning Pros Plus handles the Kitchen Exhaust side, with 350+ services performed in the Central Valley and East Bay. Our PECT Designated Technicians measure, clean, and report. Our founder holds CECS
#200452, and CPP is a proud IKECA member.
For the other four systems, call the licensed contractors who cover them. What matters is that all five records exist and all five dates are current.
