Meet Sous Chef Alexis Cabrera.
Originally from El Salvador, Chef Alexis Cabrera discovered his calling early in life. As a young boy, his family exposed him to local and international marketplaces for fruits and vegetables, fostering his loyalty to fresh, locally sourced ingredients and his love for cooking.
Upon his arrival in the U.S., he enrolled in Hospitality and Tourism classes during high school. After graduation, this experience motivated him to attend and graduate from Carlos Rosario Culinary Arts School in Washington D.C. By the age of 23, Chef Alexis had already become the kitchen manager at different restaurants in the Metropolitan Area, developing expertise in seafood.
In 2019, he joined Chef Pepe Moncayo’s team to open Cranes. Under Chef Pepe’s leadership and diligence, Cranes was honored with the coveted Michelin Star by 2021—Chef Alexis's first. The renowned expertise and respect that Chef Alexis has for Chef Pepe Moncayo inspire him to continue learning, grow professionally, and embark on any adventures proposed by Chef Pepe, as he is currently doing at Jiwa Singapura.
