Nikkei cuisine is one of the world's great culinary accidents.

In the late 1800s, Japanese immigrants landed in Peru with knives, techniques, and a palate shaped by centuries of Japanese tradition. What they found was aji amarillo, leche de tigre, choclo, and a country that eats with its whole soul.

The collision of those two worlds created something entirely new. Something that belongs to both cultures — and to neither one completely.
