I wanted to let you all know that in January I was offered (and accepted) an Executive Leadership position with Citizens Memorial Hospital. This change has necessitated a very difficult decision to
sell our food truck business. While I am thrilled at the opportunity to return to healthcare leadership, I am equally saddened by the prospect that I will no longer be associated with the Polka Dot Pig. The Polka Dot Pig was one of the most enjoyable, satisfying and rewarding adventures that I have ever been involved with. The success I have enjoyed has been due to our wonderful business partnerships and our loyal customers throughout Southwest Missouri. I want to sincerely thank you for the support and encouragement you have provided over the past few years. It has been my pleasure to serve you! For those of you with events booked with us, we do plan to fulfill those commitments but will not be scheduling any further events. My hope for the future is that I will get to see a happy new owner pulling that big beautiful blue trailer with the pink polka dots down the road on the way to another great event. I further hope that you will continue to support our region's food trucks. They represent some of the best people I have ever met.

If you are smoking meat for your holiday gatherings here’s a tip. Arrange the charcoal in a chain around the perimeter of your grill. Add hickory chunks on top of the chain and light one end of the charcoal chain. Put tin foil over the grate and place the meat on top. Open the vents, put the lid on and let the smoke do its thing!
