Open Faced Hot Roast Beef with Gravy, the ultimate comfort food.
Hot roast beef with gravy might not be officially a Pennsylvania invention, but good luck finding a diner in this state that does not have it waiting somewhere on the menu like an old friend. It is usually piled on white bread, covered in enough brown gravy to require a structural inspection, and served with mashed potatoes, fries, or whatever side dish the cook decided needed baptized. It is not fancy, it is not pretending to be modern, and it is absolutely not something you order when you are trying to “eat light.” It is diner comfort food at its finest, the kind of meal that shows up steaming hot on a heavy plate and reminds you that sometimes Pennsylvania’s greatest culinary tradition is simply gravy having no boundaries.
The only real question is, served with fries, or mashed potatoes?
