🍋✨ Ultimate Creamy Lemon Chicken with Rice & Veggies 🍗🥦🍚

🛒 Ingredients
🍗 2 chicken breasts, sliced (as shown)
🍚 2 cups cooked white rice
🥦 1 cup broccoli florets
🥔 1½ cups potatoes, diced
🍋 3 lemon slices + 1 tbsp lemon juice
🧄 3 garlic cloves, minced
🫒 2 tbsp olive oil
🧈 1 tbsp butter
🥛 ¾ cup heavy cream
🧀 ¼ cup grated Parmesan (optional, for richness)
🌿 1 tbsp fresh parsley, chopped
🧂 Salt & black pepper, to taste
👩‍🍳 Instructions
Heat oven to 200°C (400°F). Toss diced potatoes with 1 tbsp olive oil, salt, and pepper. Roast for 25 minutes until golden and crispy.
Meanwhile, steam or blanch broccoli for 4–5 minutes until bright green and tender-crisp.
Heat remaining oil and butter in a pan over medium heat. Add chicken and cook 5–7 minutes until golden and fully cooked (75°C/165°F internal temp). Remove and set aside.
In the same pan, sauté garlic for 30 seconds. Add cream, lemon juice, and a pinch of salt and pepper. Simmer for 3–4 minutes until slightly thickened.
Stir in Parmesan (if using) and return chicken to the pan. Coat well in the creamy lemon sauce.
Plate rice, roasted potatoes, and broccoli. Top with creamy chicken and drizzle extra sauce over.
Garnish with fresh parsley and lemon slices.
💡 Notes & Variations
Swap cream with half-and-half for a lighter version.
Add a pinch of chili flakes for subtle heat.
Works great with asparagus instead of broccoli.
For extra zing, add lemon zest to the sauce.

🍗 2 large chicken breasts, sliced after cooking
🥔 18–20 baby potatoes, halved
🍅 8 cherry tomatoes
🧄 4 garlic cloves, minced
🫒 3 tbsp olive oil
🥛 1 cup heavy cream
🧀 ½ cup grated Parmesan cheese
🌿 1 tsp dried thyme
🌿 1 tsp dried parsley + extra for garnish
🧂 Salt & black pepper, to taste
🌶️ Optional: pinch of chili flakes
👩‍🍳 Instructions
Preheat oven to 200°C (400°F) and lightly grease a baking tray or roasting pan.
Toss the baby potatoes with 2 tbsp olive oil, thyme, salt, and pepper. Roast for 20 minutes, turning halfway, until golden and crisping.
Meanwhile, season chicken breasts with salt, pepper, parsley, and a little olive oil.
Push potatoes slightly to the side and add chicken breasts plus cherry tomatoes to the tray. Roast for another 15–18 minutes, until chicken reaches 74°C (165°F) internally.
While the chicken cooks, make the creamy garlic sauce: sauté garlic in 1 tbsp olive oil over medium heat for 30 seconds, then stir in cream and Parmesan. Simmer gently for 3–4 minutes until smooth and slightly thickened.
Slice the chicken and drizzle generously with the creamy garlic sauce. Sprinkle with fresh parsley before serving.
💡 Notes & Variations
Swap Parmesan for mozzarella for a milder cheesy sauce.
Add broccoli or asparagus for extra vegetables.
For crispier potatoes, roast them cut-side down.
The sauce thickens more as it cools.

🐟 5 salmon fillets (as shown)
🥔 2 cups baby potatoes (halved if large)
🥬 2 cups green beans (trimmed)
🧄 3 garlic cloves, minced
🫒 3 tbsp olive oil
🍋 1 tbsp lemon juice + optional slices
🌿 1 tsp dried thyme
🌿 1 tsp dried parsley or 1 tbsp fresh
🧂 Salt & black pepper, to taste
🌶️ Optional: pinch of paprika or chili flakes
👩‍🍳 Instructions
Preheat oven to 200°C (400°F). Lightly oil a baking dish.
Toss baby potatoes with 2 tbsp olive oil, salt, pepper, and half the herbs. Spread in the dish and roast for 15 minutes first (they need a head start).
Remove from oven and add green beans to one side of the dish.
Season salmon with remaining oil, garlic, lemon juice, herbs, salt, and pepper. Place fillets in the center.
Return to oven and bake for 10–12 minutes, until salmon flakes easily (internal temp ~52–57°C / 125–135°F for moist salmon or 63°C/145°F fully done).
Optional: broil for 2–3 minutes for a slightly charred top.
Garnish with fresh parsley and lemon slices before serving.
💡 Notes & Variations
Swap green beans for asparagus or broccoli.
Add butter for a richer garlic sauce.
Don’t overcook salmon—it should be tender and flaky.
