So we have a new item on our Italian Wednesday menu ! Here is a pic .. of our Main Lobster and cheese ravioli in a Alfredo roasted red pepper sauce.

Caprese Roasted Asparagus

Ingredients

* 1 lb asparagus, trimmed
* 1 cup cherry tomatoes, halved
* 1 cup fresh mozzarella pearls
* 2 tbsp olive oil
* 2 tbsp balsamic glaze
* 1/4 cup fresh basil, chopped
* 1 tsp salt
* 1/2 tsp black pepper

Instructions

1. Preheat the oven to **400°F**.
2. Spread the trimmed asparagus in a single layer on a large baking sheet.
3. Drizzle the asparagus with olive oil.
4. Season with salt and black pepper, then toss lightly to coat.
5. Roast for **10–12 minutes**, or until the asparagus just starts to soften.
6. Remove the pan from the oven.
7. Scatter the halved cherry tomatoes and mozzarella pearls over the asparagus.
8. Return the pan to the oven and roast for another **5–7 minutes**, until the tomatoes soften and the mozzarella begins to melt.
9. Transfer to a serving plate.
10. Sprinkle with fresh chopped basil.
11. Drizzle generously with balsamic glaze before serving.

Tip

Use thicker asparagus spears for this recipe. They hold up better under the tomatoes and melted mozzarella without getting mushy.
