As Christmas approaches, we have the perfect Christmas tree salad to add to the menu over the holidays. Thanks to The Lunchbox Bunch for sharing. Take a peek:

1 bunch organic swiss chard (red or green will work) - rinsed well + sliced into thin ribbons
1/3 cup pomegranate seeds (about the amount from from 1 medium pomegranate)
3/4 cup frozen red globe grapes, sliced*
2 satsuma mandarin oranges, chopped
1 small onion, diced
1/4-1/2 cup chopped pecans, raw
2 Tbsp dried cranberries (or another dried fruit like dried golden raisins or even chopped dates!) - organic
1 small honeycrisp apple, organic - chopped

Directions: Simply prep all your ingredients and toss them with the dressing/spices in a large bowl. Toss and mix very well since this will help to distribute the flavors and infuse the chard with flavor. You can serve right away or chill in the fridge for up to 12 hours in advance before serving. Any longer and your chard will begin to get a bit soft. Serve raw and chilled. Top it! For the ""star"" tree topper, simply toast any slice of bread and using either your knife (free-hand) or a star-shaped cookie cutter, cut out a toast star to top the tree salad.

Happy Friday! Today we share a Christmas salad recipe you can use throughout the entire holiday season. Take a look:

Salad ingredients
1 crunchy round lettuce
1 pack or three mixed salad leaves (rocket, spinach, mustard leaf, lambs lettuce….)
3 green apples cored and sliced
3 hard pears, cored and sliced
1 punnet strawberries
1 punnet blueberries
250g caramelized salted nuts (easy to find at Christmas)
150g Gorgonzola cheese

Add other ingredients you like such as: grapes, kiwi, pumpkin seeds, crispy bacon pieces, other cheeses, asparagus, pecans, roasted cashews, whatever is your bag.

Steps:
1) Place the bowl of dressing in the centre of a large platter with a ladle.
2) Break up the crunchy lettuce and spread around the bowl and over the plate as a base.
3) Next cover that lettuce with interesting and tasty salad leaves. Place the apple on one side and the pear on the opposite side. Sprinkle the fruit with broken up Gorgonzola.
4)Fill the remaining sides with strawberries and blueberries.
5) Sprinkle the caramelised salted nuts over all.
6)Place the spectacular, colourful platter on the table and your guest can take their salad and ladle the dressing onto their own plates.

Enjoy the salad and enjoy your weekend.
