A breif History of Iced Tea .
While enjoyed worldwide today, iced tea has a surprisingly diverse history. Cold tea concoctions have existed for centuries, with early recipes surfacing in 19th-century American cookbooks, often prepared with green tea. However, a popular legend states it was in 1904 during the St. Louis World's Fair that iced tea truly captured the spotlight. Faced with sweltering heat, tea plantation owner Richard Blechynden pivoted to serve his tea over ice, turning a necessity into a sensation that would define the American summer.

BREWING ICED TEA
Flash Chill - quickest - Make a concentrated tea by adding the appropriate amount of tea for the vessel you are brewing it in, but add half the required hot water (essentially making a tea concentrate). When the tea is done steeping simply add ice or cold water until the vessel is full.
Refrigerator - Brew your favorite tea as normal then let chill in the frig until cooled. Add ice and enjoy.
Cold Brew - Add the correct amount of tea according to your cup or pitcher size, then fill with cold water, cover and let cold steep in the frig at least 6 to 8 hours, overnight is best.
