Old Witch is an alpine we havent had for a minute. Definitely the creamiest alpine ever, and some almost Tete de Moine like funk with Challerhocker-esq umami. Lovely.

We always ripen our cheeses well, but there are still stand outs, and this week its this wheel of Truffle Tremor from Cypress Grove. Oozing edges like this are the difference between a good cheese and a life changing one.
