Sorry for the delay in getting tonight's special posted. I had a bunch of errands to run. Feel free to compliment me on my haircut when you see me—I've been accepting compliments all day.

MILLIONAIRE'S SCALLOP TIPS

Sweet sea scallops sautéed in garlic butter, with lump crab meat, and finished in a rich white wine parmesan cream sauce.

Served with a toasted puff pastry and roasted asparagus.

The only thing missing is someone feeding it to you while fanning you with hundred-dollar bills.

We'd like to apologize in advance to anyone who planned on eating healthy this Thursday.

Because we created something that can only be described as a complete breakdown of self-control.

Crispy Jalapeño cheddar waffle.

Creamy homemade mac & cheese.

A mountain of slow-smoked pulled pork.

Crispy onion straws.

At some point, this stopped being a special and became a dare.

NUCLEAR WEDNESDAY ALERT

Some restaurants put onions on a steak.

We took that personally.

Tonight's French Onion NY Strip starts with a hand-cut NY Strip grilled to perfection, then gets absolutely smothered in slow-caramelized onions, rich beefy French onion sauce, and melted Swiss cheese.

Basically, we looked at a bowl of French onion soup and said:

"Cool... but what if it came with a steak?"

Served with garlic mashed potatoes because leaving that sauce behind would be a crime.

Come hungry. Wear stretchy pants. Ignore your cardiologist.

I'm going to brag a little tonight because, frankly, I've earned at least 30 seconds of it.

Two guests came in this evening from Southern Maine. They told me they eat seafood twice a week, travel extensively, and make a point of trying local restaurants everywhere they go.

After dinner, they told me our Baked Stuffed Haddock was the best they had ever had.

Then they asked what culinary school I attended.
I told them I wasn't sure the Maine Criminal Justice Academy qualified as a culinary institute, although I did spend a week assigned to kitchen duty. ( let's hear from Law Enforcement)

The truth is, I've never attended culinary school. Everything I've learned has come from years of hard work, plenty of mistakes, a lot of long days, and an unhealthy relationship with butter.

So tonight I'm feeling pretty good.

Somewhere there's a guy with $80,000 in culinary school debt, and a former Police Chief from Northern Maine just got asked where he earned his chef's jacket.

Life comes at you fast.

Thank you all for the support. It means more than you know. And to the culinary schools that may be reading this, my application packet is available upon request. I assume honorary degrees are still a thing.

PRIME RIB CONTINUES TONIGHT... BUT WE HAVE A MORE IMPORTANT SPECIAL TO ANNOUNCE.

Today is our wedding anniversary.

And in a stunning display of poor planning, questionable life choices, and a complete lack of common sense... my wife and I are both spending it at the restaurant.

No candlelit dinner.
No sunset cruise.
No couples massage.

Instead, we'll be celebrating with Prime Rib, ticket printers screaming like smoke alarms, and me asking, "Did table 6 get their ranch?" for the 47th time.

The truth is, restaurants aren't just what we do—they're our life. And somehow my wife has tolerated the long hours, late nights, stress, chaos, and occasional moments when I thought buying another piece of kitchen equipment was a good financial decision.

So tonight, while we're serving Prime Rib, I'd like everyone to help me wish my beautiful wife a Happy Anniversary.

Because after all these years, she's still my favorite person to work beside, laugh with, argue with, and build this crazy dream with.

Happy Anniversary, sweetheart.

Now let's celebrate the way restaurant people do...

By working through dinner and eating something cold at 9:30 tonight.

For over a month, people have wandered the streets aimlessly. Marriages have been tested. Diets have recovered. Hope was fading.
But now...
PRIME RIB IS BACK.
Slow roasted. Juicy. Tender enough to make you forget every bad decision you've made this week.
Served with a loaded baked potato and vegetable because apparently we're supposed to pretend this is a balanced meal.
Come get it before it disappears again and we're forced to attend another support group for Prime Rib withdrawal.

SWEET CHILI DORITO CHICKEN WRAP

We took crispy chicken… covered it in sweet chili sauce… buried it under Sweet Chili Doritos… then wrapped the whole thing up like a felony.
Crunch so loud the neighboring tables file noise complaints.
