More Lao comfort food. The versatile savory sausage. Every culture has it. Lao Sai Oua - Lao Sausage. This is a Seattle version of the Sai Oua Sohm - sour pork sausage. On the way to work, stop by a street vendor to grab a couple of links, sticky rice, and your favorite kind of jeow (chili sauce). You’ve got a meal in hand. It’s a great simple lunch for busy workers and students. But it’s not so simple to make a good one.
You can buy these at the Vientiane Market in south Seattle. I overcooked these a little when trying to brown the skin. The sour sao oua doesn’t have as much pork fat as the regular versions.
