The calendar may say fall, but apparently

Kentucky didn’t get the memo!

While we wait for those crisp mornings and sweater-weather evenings, some of our favorite fall ingredients are already starting to arrive.

This week, we’re giving you a little taste of fall — without the heavy fall dinner.

Dijon Pork Tenderloin with Fresh Apple-Herb Relish
For the Pork

2 pork tenderloins, about 1–1¼ lb each

2 Tbsp Dijon mustard

1 Tbsp olive oil

1 Tbsp apple c***r vinegar

1 Tbsp honey

1 tsp fresh thyme

1 tsp kosher salt

½ tsp black pepper

Fresh Apple-Herb Relish

2 crisp apples, finely diced

¼ cup finely diced red onion

2 Tbsp chopped fresh parsley

1 Tbsp apple c***r vinegar

1 Tbsp olive oil

1 tsp honey

1 tsp Dijon mustard

Pinch of salt and pepper

Whisk together the Dijon, olive oil, vinegar, honey, thyme, salt and pepper. Coat the pork and roast at 400°F for approximately 20–25 minutes, or until it reaches 145°F internally. Allow it to rest before slicing.

For the relish, simply toss the apples, red onion, parsley, vinegar, olive oil, honey and Dijon together. Sautee until soft. Spoon the cool, crisp apple relish over the sliced pork just before serving.

It’s fresh, light and just fall-ish enough for a 90-degree September day in Kentucky!

And, of course, if even turning on the oven sounds like too much…

Let Home Cuisine do the cooking for you.

We’d love to cook for you next week.

It’s hard to believe we have been cooking for Louisville for more than 22 years.

When my mother, Sandy, and I started Home Cuisine, the idea was pretty simple: make really good food with quality ingredients and give people an easier way to enjoy a home-cooked meal.

More than two decades later, that’s still what we do.

Of course, a lot has changed along the way. We’ve created thousands of recipes, watched food trends come and go, built wonderful relationships with local farmers, and cooked more meals than I could ever begin to count.

But my favorite part has always been the people.

Over the years, we’ve cooked for busy families, new parents, grandparents, people recovering from surgery, professionals coming home after a long day, and plenty of folks who simply decided they’d rather let us do the cooking. You name it!

Some of you have been with us for years. Others have just discovered us. Either way, when you choose Home Cuisine, you’re supporting a small local business and a kitchen full of people who genuinely care about the food we send out the door.

And after 22+ years, we’re still trying new recipes, finding great local ingredients, and getting excited about what we’re cooking next.

Thank you for letting us cook for you. We hope you’ll join us for dinner again

soon.

Home Cuisine is happy to share a WONDERFUL end of summer recipe!

This is one of those recipes that we all make at home...so simple. So seasonal and SO DELICIOUS

Tomato & Goat Cheese Puff Pastry Tart

A simple, elegant late-summer tart that really showcases ripe beefsteak tomatoes. The goat cheese base adds enough tang and richness to balance the tomatoes.

Yield: 8 appetizer portions or 4–6 entrée portions
Oven: 400°F

Ingredients

1 sheet puff pastry, thawed

3 large ripe beefsteak tomatoes

8 oz goat cheese, softened

3 oz cream cheese, softened

2 tablespoons heavy cream

1 tablespoon Dijon mustard

1 small garlic clove, finely grated

1 teaspoon fresh thyme leaves

½ teaspoon kosher salt, plus more for tomatoes

¼ teaspoon black pepper

1 egg + 1 tablespoon water, for egg wash

1 tablespoon extra-virgin olive oil

¼ cup fresh basil leaves

Flaky sea salt, for finishing

Optional: balsamic glaze

Preparation

Prepare the tomatoes.
Slice the beefsteak tomatoes about ¼-inch thick. Arrange on paper towels and sprinkle lightly with kosher salt. Let stand for 20–30 minutes, then blot very well with additional paper towels. This is important—it keeps the tart from becoming soggy.

Make the goat cheese base.
Mix the goat cheese, cream cheese, heavy cream, Dijon, garlic, thyme, salt, and pepper until creamy and spreadable.

Prepare the pastry.
Unfold the puff pastry onto a parchment-lined sheet pan. Lightly roll it into approximately a 10 x 12-inch rectangle. Score a ½-inch border around the outside without cutting all the way through. Prick the center generously with a fork.

Par-bake.
Brush the border with egg wash. Bake at 400°F for 10–12 minutes, until the pastry begins to puff and turn pale golden. Remove from the oven. If the center has puffed significantly, gently press it back down with a spatula.

Assemble.
Spread the goat cheese mixture over the center of the pastry, staying inside the border. Arrange the tomato slices over the cheese, slightly overlapping them. Brush or drizzle the tomatoes lightly with olive oil and season with black pepper.

Finish baking.
Return to the oven for 18–22 minutes, until the pastry is deeply golden and crisp and the tomatoes are roasted around the edges.

Finish and serve.
Let rest for about 10 minutes. Scatter generously with fresh basil and a little flaky sea salt. Add a very light drizzle of balsamic glaze if desired.

Chef's note: For really beautiful seasonal beefsteaks, I would skip mozzarella or Parmesan. Keeping the filling primarily goat cheese lets the tomatoes remain the star. A few thinly sliced heirloom tomatoes mixed with the beefsteaks would also make this especially attractive for catering or an à la carte summer menu.

Don't feel like fooling with the shopping, cooking, and cleaning up? We can do that for you.... all of it

We can’t wait to hear from you!
