French Onion Chicken Bake

This cozy French Onion Chicken Bake brings together juicy chicken thighs, sweet caramelized onions, earthy mushrooms, and a rich, savory gravy in one irresistible dish. Ingredients

For the Chicken
6 bone-in, skin-on chicken thighs
1 tbsp olive oil
1 tsp kosher salt
½ tsp black pepper
1 tsp garlic powder
1 tsp onion powder
1 tsp dried thyme
½ tsp smoked paprika
For the Onion Gravy
12 oz baby pearl onions, peeled
8 oz baby bella mushrooms, halved
3 cloves garlic, minced
2 cups beef broth
1 tbsp Worcestershire sauce
1 tbsp Dijon mustard
1 tsp fresh thyme leaves (or ½ tsp dried)
2 tbsp unsalted butter
1 tbsp cornstarch
2 tbsp cold water

Instructions

Preheat the oven to 375°F (190°C).
Pat the chicken dry and season with salt, pepper, garlic powder, onion powder, thyme, and smoked paprika.
Heat the olive oil in a large skillet over medium-high heat. Sear the chicken skin-side down for 4–5 minutes until deeply golden. Flip and cook for another 2 minutes. Transfer to a baking dish.
In the same skillet, melt the butter and sauté the pearl onions and mushrooms for 6–8 minutes until lightly browned. Stir in the garlic and cook for 30 seconds.
Add the beef broth, Worcestershire sauce, Dijon mustard, and thyme. Bring to a gentle simmer.
Pour the sauce over the chicken. Cover tightly with foil and bake for 35 minutes.
Remove the foil and continue baking for 20–25 minutes, until the chicken reaches 165°F (74°C) and the skin is beautifully browned.
Mix the cornstarch with the cold water and stir it into the pan juices. Return to the oven for 5 minutes until the gravy thickens.
Spoon the rich onion and mushroom gravy over the chicken before serving.

4 cups chicken broth

1 cup heavy cream

½ tsp black pepper
For the Noodles & Vegetables
12 oz frozen egg noodles
1½ cups frozen peas and carrots
2 medium Yukon Gold potatoes, peeled and diced
2 tbsp butter
2 tbsp cornstarch + 2 tbsp water (optional, for thickening)
Instructions
Place the chicken breasts into the slow cooker.
Add chicken broth, cream of chicken soup, garlic powder, onion powder, thyme, parsley, salt, and pepper. Stir gently.
Cover and cook on Low for 6–7 hours or High for 3–4 hours until the chicken is tender.
Remove the chicken and shred it using two forks.
Return the shredded chicken to the slow cooker along with the diced potatoes and frozen peas and carrots.
Stir in the frozen egg noodles, butter, and heavy cream.
Cover and cook on High for 30–45 minutes, or until the noodles and potatoes are tender.

4 cloves garlic, minced
1 (14.5 oz) can diced tomatoes, undrained
1 (8 oz) can tomato sauce
½ cup beef broth
2 tbsp olive oil
Seasoning
1 tsp Italian seasoning
1 tsp smoked paprika
1 tsp garlic powder
½ tsp onion powder
½ tsp dried oregano
½ tsp crushed red pepper flakes (optional)
1 tsp kosher salt
½ tsp black pepper

Instructions
