French Onion Chicken Bake
This cozy French Onion Chicken Bake brings together juicy chicken thighs, sweet caramelized onions, earthy mushrooms, and a rich, savory gravy in one irresistible dish. For the Chicken
6 bone-in, skin-on chicken thighs
1 tbsp olive oil
1 tsp kosher salt
½ tsp black pepper
1 tsp garlic powder
1 tsp onion powder
1 tsp dried thyme
½ tsp smoked paprika
For the Onion Gravy
12 oz baby pearl onions, peeled
8 oz baby bella mushrooms, halved
3 cloves garlic, minced
2 cups beef broth
1 tbsp Worcestershire sauce
1 tbsp Dijon mustard
1 tsp fresh thyme leaves (or ½ tsp dried)
2 tbsp unsalted butter
1 tbsp cornstarch
2 tbsp cold water
Instructions
Preheat the oven to 375°F (190°C).
Pat the chicken dry and season with salt, pepper, garlic powder, onion powder, thyme, and smoked paprika.
Heat the olive oil in a large skillet over medium-high heat. Sear the chicken skin-side down for 4–5 minutes until deeply golden. Flip and cook for another 2 minutes. Transfer to a baking dish.
In the same skillet, melt the butter and sauté the pearl onions and mushrooms for 6–8 minutes until lightly browned. Stir in the garlic and cook for 30 seconds.
Add the beef broth, Worcestershire sauce, Dijon mustard, and thyme. Bring to a gentle simmer.
Pour the sauce over the chicken. Cover tightly with foil and bake for 35 minutes.
Remove the foil and continue baking for 20–25 minutes, until the chicken reaches 165°F (74°C) and the skin is beautifully browned.
Mix the cornstarch with the cold water and stir it into the pan juices. Return to the oven for 5 minutes until the gravy thickens.
Spoon the rich onion and mushroom gravy over the chicken before serving.
