For many Filipinos, kare-kare is a dish that brings people together.

It’s often served during family gatherings, celebrations, and Sunday lunches—not just because it’s delicious, but because it takes time and care to make.

What makes kare-kare special is that the sauce is the star. Rich, nutty, and deeply savory, it’s traditionally paired with bagoong, whose salty punch brings the whole dish to life.

At Manila Inasal, Chef Natalia Moran’s Beef & Oxtail Macadamia Kare-Kare honors that tradition while taking a different path.

Instead of peanuts, our sauce is made with macadamias and almonds, creating a velvety texture and flavor profile that’s uniquely our own while being mindful of common peanut allergies.

A special moment from last night at the Gold House Founders Party. 🇵🇭✨

One photo filled with Filipino and Filipino American directors, actors, producers, chefs, entrepreneurs, culinary leaders, creatives, and community builders — all creating, building, and pushing culture forward in their own way.

The room included creatives connected to Forgotten Island, cast members from The Pitt, Emmy nominees and winners, and people shaping conversations across film, television, food, music, business, and the arts.

Amongst the attendees were Liza Soberano, Bella Poarch, H.E.R., Nurse John, Azia Celestino, R’Bonney Gabriel, alongside actors, filmmakers, chefs, founders, artists, and creatives from across the Filipino community.

Not that long ago, a room like this would’ve been hard to imagine.

Now Filipino and Filipino American voices are helping shape spaces and industries that once felt out of reach — not as guests on the sidelines, but as part of the future of culture itself.

A future where our stories, ideas, food, art, and perspectives are part of the global narrative.

Proud that Manila Inasal is part of the movement helping move Filipino culture forward on a global stage.

And we’re only getting started.

I first had inasal in Bacolod—nothing fancy, just rice, chicken, and a sarsawan with garlic and chicken oil. But it was so good, it stayed with me.

I also spent time in Iloilo, where it’s a little different—slightly sweeter. That’s when I realized there isn’t just one version. Every place does it their own way.

You’ll find inasal across the Philippines—Bacolod, Iloilo, Cebu, Antique and many more—each with its own take.

Over time, it became something I wanted to make my own. I kept thinking about lechon manok—something you bring to the table, something comforting, something people share.

That’s really what we tried to do here. Something you can have on your own, but also something you can put in the middle and enjoy with everyone.

Ours leans closer to Bacolod—but it’s not exactly that.

We marinate it for 48 hours in our own recipe, grill it, and finish it the way we like it.

This is ours. 🇵🇭✨
