At it today till 8pm. Closed to@orrow so .davie and I can have a holiday.

Beef Tenderloin Tartare hand minced to order with Capers, Aminos, Shallots and a Yardfall Meyer Lemon and Lime Kosho I’ve had quietly fermenting for 10 months. Grilled Asparagus and Snap Peas with Radishes. Finished with a yolk from our backyard chickens.

A dish with a sense of time and place. I think it’s delicious!

Heirloom Tomato season is just starting and they also have amazing Summer Zucchini’s and so off the cuff we made a Spinach Pasta 3-layer Lasagna with all these wonderful ingredients along with Ricotta.

It’s also available to go for Memorial Day feast along with all our dishes.

I remember we did this dish during COVID take out and staff was emphasizing to me to keep it simple and offer only Flatbreads and a salad to go. I said ‘no.’

I remember at the scariest time in COVID offering this dish and the super-positive responses we got and the fellow chefs that were blown away at such a simple yet nourishing dish.

When I set out to choose wine for the restaurant 22+ years ago I consciously decided I would only represent wine’s local to this very special place in Santa Barbara County. In particular I wanted to compliment the well known Pinot Noirs and Chardonnays, Syrahs and Sauvignon Blancs, with lesser known varietals. This is evidenced in our current white selections which I feel pair wonderfully with our vegetable-centric and light, simple way of cooking.

This week we have some stunners of lesser known varietals. From left to right:

Flood Family Vineyard Sylvaner 2023. The varietal itself is an ancient one from the Alsace and Central Europe. Bright orchard fruits and white flowers.

Dry Riesling ‘28 Days On Skin’ 2024 creating a dry ‘Orange’ Wine perfect for sipping in the garden.

Open Gate Vineyard Vermentino 2025. This Italian Varietal is light and beautifully balanced. High acids with a citrus note.

Beef Tongue Pastrami Sando with .davie Torn Potatoes. We brined the tongue for 2 and a half weeks, drained and air dried it, then simmered it in a seperate brine for 2 hours and then dry rubbed it and smoked it in the wood oven for 45 minutes before slicing. It is melt-in-your-mouth delicious.

Only the 3rd time in 22 years working with beef tongue and it is delicious!

Flatbread Special is what to do when you have a mountain of Yardfall and Lemons! Lemon Flatbread with Ricotta, Pistachio, Pancetta and fresh Mozzarella. .davie was unsure but now she is!

Slow Oak-Smoked Lamb Salad with Za’Atar and early season Heirloom Tomatoes.

Almost 1500 guests in to Flatbread in Los Alamos this weekend. We make good food. Newcomers. First-timers. Regulars. I’m exhausted. It’s Monday and I’m doing a site visit for an upcoming event. Soxx the rescue is solo with me and relishing the time.
