We proudly source and nixtamilize Organic Single-Origin Cacahuazintle Corn from a farming community in Estado de México. It is the star of pozole throughout Mexico and now Littleton, CO!
Pozole derives from Nahuatl Pozolli, as the dishes originates in the 16th Century.
Since maize was a sacred plant for the Aztecs and other inhabitants of Mesoamerica, pozole was made to be consumed on special occasions and is often Made for New Year's Eve and Mexican Independence Celebrations.
You can get it here everyday!

Quesabirria Tacos have become almost synonymous with Birria, but Birria itself can be presented in a number of ways. Originating in Jalisco Mexico it is traditionally made with Goat or Lamb, but Beef Birria has become very popular. It was prepared for major celebrations like wedding and holidays where it would be served as a stew over Mexican Rice or with a side of tortillas. The Quesabirria is the Taco Version with Birria Dipped Tortillas, Cheese, Onion, Cilantro and the Coveted Consomé!

Peru has a a few influences on our menu from our beloved Peruvian Chicken Wings, to Peruvian Chicken Tacos and Peruvian Brick Chicken. Peru has many cultural influences, but the Chinese and Asian influences come through in the Peruvian Marinade used for the Chicken, which is Soy Sauce Based with Lime, Ginger and Some Peruvian Chiles. Would you like to see more Peruvian Dishes, like Lomo Saltado and Arroz Chifa? Maybe for one of our upcoming Pairing Dinners....
