The Arkansas Beef Council funded a University of Arkansas project using artificial intelligence to pinpoint the bacteria behind premature beef browning — a challenge that costs the U.S. beef industry an estimated $3.7 billion each year. By identifying which microbes help beef keep its bright red color longer, researchers are laying the groundwork for natural, clean‑label preservation methods that reduce waste and add value at the meat case.

This is checkoff research in action: practical, science‑driven, and aimed at improving the eating experience consumers pay for.

It’s National Cheeseburger Day, and with Georgia coming to Fayetteville tomorrow for the first SEC home game, the timing is fitting.

Our cheeseburger stance is straightforward: 80/20 ground beef, loosely formed, salted on the outside just before cooking. Press once, not twice, and add the cheese while it’s still on the grill. Everything else is personal preference.

Each spring, the Council hosts the Arkansas Best Burger Contest, with the winner announced during Beef Month in May. Consider today your first chance to scout a nomination.

Every time you buy Arkansas beef, you rely on producers you’ve never met to follow proper standards.

Beef Quality Assurance (BQA) is the program that helps ensure that happens. It provides training in cattle handling, animal health, recordkeeping, and the correct use of health products. Certified producers follow a written standard and are audited for compliance.

The Beef Council supports BQA in Arkansas with $9,559.75 budgeted for FY27 through the University of Arkansas System Division of Agriculture. It’s a relatively low‑visibility investment with significant impact.

Producers: If you are not BQA certified, consider completing the training. It requires a short session and helps protect the value of the animals you sell.

Consumers: BQA offers a clear answer to the question of oversight. Producers commit to meeting the standards, and they fund the program themselves through checkoff dollars.

Labor Day honors work. Ours does not stop for it.

Arkansas cattle producers were up this morning the same as any other morning. Checking water in the September heat, moving cattle, hauling hay, fixing what broke yesterday.

If beef is on your table today, it got there through a chain of people who worked while most of the country had the day off: the producer, the hauler, the plant employees, the truck driver, the person who stocked the case.
