Our bucatini starts with pasta made in-house each day using nothing more than semolina and water, extruded fresh and finished in a slow-simmered sauce layered with tomatoes, shallots, scallions, garlic, and Calabrian chiles. We cure our pancetta for nearly a week before folding it into the sauce, then finish everything with a splash of wine, pecorino, lemon, and seasoned pasta water to bring it all together. Rich, bright, a little spicy, and entirely handmade from start to finish.
