Troy Olson, here 👋🏼 – alongside the love of my life, my wife and business partner, Jenn. We're incredibly proud to welcome you to the 𝐆.𝐎.𝐀.𝐓.'𝐬 𝐓𝐚𝐛𝐥𝐞 - in Lincoln, Nebraska (2901 S. 84th St.).
With our Grand Opening less than a week away (8/10), we wanted to take a moment to introduce ourselves and share the heart behind what we've built.
The 𝐆.𝐎.𝐀.𝐓.'𝐬 𝐓𝐚𝐛𝐥𝐞 was never meant to be just another restaurant. It's the culmination of years of dreaming, decades of experience and a belief that some of life's best moments happen around a table.
Jenn and I met as college sweethearts. I was on the football field, and she was dancing on the sidelines. From the very beginning, our lives have revolved around teamwork, relationships and creating meaningful connections with the people around us. But those values were shaped long before we met.
Like many of you, we grew up in homes where the dinner table meant something. It wasn't simply where meals were served. It was where stories were told, lessons were learned, victories were celebrated and tough days were talked through. It was where laughter filled the room, and everyone had a seat.
It was where family happened.
Today, as parents to twin daughters and a son, we hold onto that same belief. In a world that moves fast, we still believe there's something special about gathering together, putting down the distractions and being present with the people who matter most. That's the feeling we wanted to create at the 𝐆.𝐎.𝐀.𝐓.'𝐬 𝐓𝐚𝐛𝐥𝐞.
After more than 25 years in the restaurant industry, I've learned that great hospitality isn't just about exceptional food or outstanding service. It's about making people feel welcome. It's about creating a place where strangers become regulars, regulars become friends and every guest feels like they belong.
Together, Jenn and I have built a space that's warm, inviting and elevated enough to make any occasion feel special – whether you're celebrating a big win, sharing a date night, meeting with colleagues or simply enjoying dinner with family.
The people you don’t see in this photo are perhaps the most integral part our story. We've built this place with an incredible team. Every person who has joined us was chosen with intention. Because character, hospitality and genuine care for people matter. The culture we're creating is rooted in relationships, and we know the experience we're striving to deliver is only possible because of the people who bring it to life every day.
To everyone who has already supported us, shared our story and spread the word, 𝘵𝘩𝘢𝘯𝘬 𝘺𝘰𝘶. Your encouragement, excitement and belief in what we're building mean more than you know.
This restaurant may have our names attached to it, but it belongs to the community that helped make it possible.
So, consider this our personal invitation.
