To our Liberty Hill community,
Writing this feels heavy, and if we're being completely transparent, a part of us felt hesitant to post this. We reached out to you back in January when things were tough, and the way this town wrapped its arms around us was something we will never forget. You kept our lights on, and we are forever grateful for every single person who walked through our doors.
We never want to feel like we’re constantly asking for a lifeline or just begging for business. But the reality of running a single-unit, independent restaurant today is a quiet, exhausting daily fight, and we want to share what that actually looks like behind the scenes.
Over the past two years, wholesale food and grocery costs have climbed to record highs. Basic staples—meat, produce, dairy, paper goods—cost drastically more than they used to, while our margins have shrunk to razor-thin levels. Unlike major corporate chains, independent mom-and-pop shops don't have corporate supply lines, nationwide buying power, or massive marketing budgets to absorb those increases or compete with the incoming fast-food giants.
When you combine rising food costs with rent, utilities, and high credit card processing fees, the truth is that most small restaurants are operating on a razor's edge—often just a few slow days or bad weeks away from having to lock the doors for good.
This message isn't just about Texas Taco Kitchen. It’s about the heartbeat and identity of Liberty Hill.
When a corporate chain opens, it brings convenience. But when a local spot closes—like we've painfully witnessed recently with Junction Cafe, Taqueria Ranchito, Bella Sera, The Daily Blend, and Sweet Retreat—a piece of our town’s soul goes with it.
Corporate headquarters don't wake up before 4:30 in the morning to roll 325 tacos to support the high school band (like our team is doing in the photo above). They don't sponsor our local youth sports teams, show up for town fundraisers, or get to know your family's favorite orders by heart. The local families behind these independent spots do, because this is our home, too.
We know times are tough for every household right now, and inflation affects your family budget just as much as ours. We don't expect anyone to eat out every single day. All we humbly ask is that the next time you decide to grab breakfast, lunch, or dinner, you consider choosing a local, family-owned spot.
Thank you for listening, for believing in small business, and for always being such an incredible community.
Beyond our family, every taco ordered directly helps us keep our incredible team—the local cooks, cashiers, and team members —working and providing for their own homes.
If you're looking for a way to support local this weekend, come grab breakfast on your way to Saturday sports, pick up lunch with the family, or order online for dinner. And even if you can't stop by in person right now, simply sharing this post with a neighbor helps more than you know.
We love Liberty Hill, we love serving you, and we want to keep being a place where our community gathers. Every single meal, every visit, and every taco truly makes a world of difference right now.
