Garlic knots weren't planned... they were a happy accident.

Back in New York pizzerias during the 1970s, pizza makers began tying extra pieces of fresh pizza dough into knots instead of throwing them away. After baking, they were tossed with garlic, butter, Parmesan, and herbs—and customers loved them.

Ever wonder why pizza from a pizzeria tastes different than pizza made at home?

A big part of the answer is the oven.

Professional stone deck pizza ovens operate at much higher temperatures than most home ovens. That high heat cooks the pizza quickly, allowing the crust to become crisp on the outside while staying light and chewy inside. At the same time, the stone deck helps remove moisture from the bottom of the dough, creating the texture people expect from authentic New York-style pizza.

Pizza lovers have a saying: if a pizzeria can make an incredible cheese pizza, everything else on the menu is likely to be just as good.

Why? Because there's nowhere to hide...

With only dough, sauce, and cheese, every ingredient has to stand on its own. The crust needs the right texture, the sauce needs balanced flavor, and the cheese has to complement—not cover up—the rest of the pizza.
