Lemon Herb Salmon with Japanese Sweet Potatoes & Asparagus – (30 min)

Ingredients:
2 salmon fillets (6 oz each)
1 cup Japanese sweet potato, cooked & cubed
1 cup asparagus, trimmed
1 tbsp olive oil
1 lemon (juice & zest)
1 tsp garlic powder
½ tsp black pepper
¼ tsp sea salt
1 tsp dried parsley
Instructions:
Preheat oven to 400°F (200°C).
Roast sweet potatoes: Toss cubed Japanese sweet potatoes with ½ tbsp olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until tender.
Prepare asparagus: Toss with the remaining ½ tbsp olive oil and place on the baking sheet during the last 10 minutes of roasting.
Cook salmon: While potatoes roast, season salmon with lemon zest, garlic powder, black pepper, and dried parsley.
Pan-sear salmon: Heat a skillet over medium heat and cook salmon for 4-5 minutes per side, or until flaky.
Serve: Plate salmon with roasted Japanese sweet potatoes and asparagus. Drizzle with fresh lemon juice.
