We love our town and we consider our guests family. Because of that we want to be completely transparent with you about how we run things and some of the hurdles we’ve been working through lately
When we opened three years ago we wanted to bring fresh and elevated daily specials to Lawrenceville. But we quickly realized that what people really love and want on a regular basis is great comfort food. We listened to you! We’ve always had our signature smash burgers on the menu. To give you the absolute best version of the food you love we refused to cut corners. Even with fried food we don't use cheap oils. We fry exclusively in premium beef tallow because it tastes a million times better and keeps our quality high even though it costs us a lot more
Later on we added our high-end steaks to the lineup to help us make ends meet as food costs started rising. Running a scratch kitchen is a balancing act. Shifting things up is just a normal part of the restaurant world today. It allows us to keep up with the changing market and keep our kitchen creative. It also gives you guys the chance to try awesome new things so our menu never becomes boring or stagnant
Here is the honest truth about how we have to operate right now to keep that quality alive:
🥩 Why We Run Out of Items (Especially on Weekends)
The price of beef is skyrocketing and food shortages are a weekly battle. Because our kitchen is small and our steaks are ultra-premium cuts they are incredibly expensive. We cannot afford food waste. We buy what we need for the week in limited and fresh quantities. If we are out of steaks by Saturday night it’s because people have been buying them up all week! Running out means your food is fresh and never frozen
🍔 Our Evolving Menu
We build our menu based on what actually sells. We’ve had people comment that the menu changes too much but we have to roll with what people are buying. We simply can't let expensive food go to waste just to keep an item around that only a couple of people order. We adapt so we can stay open and keep serving you
👋 New Faces Up Front
As our local student staff headed off to college this month we lost a lot of our veteran crew. We are currently training a great new group of front-of-house faces. It takes time for new hires to get their footing. We truly appreciate your patience and grace while they learn the ropes
🗣️ Talk to Us, Not Google
We are a small local business. When someone leaves a bad review on Google instead of talking to us it permanently hurts our business over a mistake that could have been fixed in two minutes. If something is wrong with your food or your service please tell your server or ask for us immediately. We want the chance to make it right for you on the spot! On the flip side if you have had a great experience with us taking a quick minute to leave us a positive review online goes an incredibly long way
We love seeing how this town rallies around local businesses when they face tough times or operational struggles. Lawrenceville is incredible at showing up when it counts and we hope our hometown community can rally behind our crew right now too. We serve a lot of wonderful travelers and visitors from out of town but nothing beats seeing our own neighbors fill the tables. The best way to support us through rising costs, training new staff, and working through equipment hiccups (like our main kitchen cooler going down a couple of weeks ago) is simply to walk through our doors, enjoy a meal, and talk to us
