Today’s challenge: Can King Arthur Sir Galahad produce that classic New York-style slice we all know and love?
For me, a true NY slice has to be:
✅ Thin
✅ Crispy on the bottom
✅ Light and airy inside
✅ Strong enough to hold without flopping
To simulate that classic NY-style bite, I’m thinking:
💧 60-65% hydration
❄️ 48-72 hour cold fermentation
🧂 2-2.5% salt 
🍬 1.5-2.5% sugar
🫒 1-2% oil
🔥 Bake on steel at high heat

Frank put our King Arthur dough to the test and turned it into bagels. So far, they’re looking pretty good! 👀🥯

We’ll always keep an open mind and continue experimenting with different flours to see how they perform in our pizzas, bagels, and everything in between. That’s how we learn, improve, and keep pushing for the best possible product.✨🍕
