For this season’s fish course, we prepare live Japanese eel.

We grill it over binchotan charcoal while glazing it with our Raku sauce. We add steamed rice, green onions, and mold it in a battera press.

We serve it wrapped with roasted seaweed, and come with a surprise accompaniment, steamed Shirako.
