The Pasta is The Star the Sauce is the Acompanyanado. Just like Frys are the Star not the Ketchup. That's why the quality of the wheat water eggs are so important to Italians. A great pasta with some fabulous EVOO & some Pecorino or Parmigiano is all you need sometimes h is so comforting!.

Our patrons favorite dish tonight was this Risotto asparagi e pecorino tartufo Olio Nuevo. Unfortunately the lighting didn't capture the vivid green hues of this dish it's so simple & beautiful. What a delicious & lighter version of risotto this is especially in the spring.

Tonight's hands down favorite;

Fattoria Del Vicario Spring Wheat Regine aka (Fat Bucatini) in a decadant Mushroom Bolognese finished with Olio Nuevo & Pecorino Tartufo. Looks deceptively simple yet it's complex & decadent & the mouthfeel is something the patrons are not used to but in a good way!
