Sidama washed from Bensa? Say no more. That is the general sense we have here at Backyard Beans about these coffees. Sidama is one of the most renowned coffee producing regions in the world – and things only get better as you narrow it down to Bensa, and then further down to the Shantawene kebele. This is where the Ayla washing station is and this coffee is a standout winner. Elegant and sweet, we taste floral notes of bergamot, vanilla, and black tea, filled out with juicy notes of meyer lemon and peach.⁠

The quality in this coffee begins with cherry selection. Cherries are dunked in water to sort out the floaters. Then it is depulped and fermented for 100 hours. Ayla is implementing a new fermentation method for this coffee – a longer fermentation time and the water being changed out every 24 hours. Fermentation proceeds slowly at 65-69 Fahrenheit. The coffee is then washed and spread out on raised beds to dry under parabolic shade nets for 15 days.⁠

Fertilization is rare in the area because the soil is naturally fertile. Coffee in this area is native to the forests and helps to protect the ecosystem. Competing crops are khat and eucalyptus which are environmentally damaging due to their high water consumption, which depletes the water table. We are happy to be highlighting Sidama coffee and doing a small part to help sustain coffee production and environmental sustainability in this area.⁠

Las Lajas is back! Deliciously fruity and juicy, this is quite the sweet coffee with loads of red fruits and subtle winey notes. Enjoy this coffee as we say goodbye to summer and welcome in fall, it won’t be around long!⁠

Dona Francisca and her husband Oscar Chacon of Las Lajas are 3rd generation coffee producers. They own and manage their micro mill, Las Lajas, and specialty coffee farms in different regions of the foothills of the Poas volcano in the Central Valley of Costa Rica. In 2000, they started processing coffee themselves at the Las Lajas mill, largely focusing on yellow, red and black honey processed coffee. The Chacon family is committed to producing the best high-quality specialty coffee while focusing on environmentally friendly practices. During the harvest of their coffees, they measure the brix content in the coffee cherries to determine the best time to pick their coffees to obtain the utmost sweet and fruit forward profile. Additionally, water used at Las Lajas is minimal, since their coffees do not undergo the washed process. Oscar and Francisca are focused on sharing their knowledge and passion for specialty coffee with their four children, as they will eventually take the reins of the family business.⁠

Family Drama is back and spicier than ever for the fall of 2026. We source coffees from Central America each year for this blend. Because coffee crops are seasonal, the Fall season is the perfect time to enjoy fresh crop Latin America coffees. This year we selected Guatemala San Martin Jilotepeque and Costa Rica Dota, both washed process coffees. This is a medium roast coffee with notes of caramel, dates, orange, and almond. It is oh so delicious.⁠

Guatemala coffees like this San Martin are prized for their smooth chocolaty flavors with subtle stone fruits – and that is exactly what you get in this cup. Medium acidity, low bitterness, medium sweetness, and an aftertaste that leaves you wanting more. This is a great daily driver, a cup you can count on to be reliable and predictable. ⁠

The Asproguate farmer’s association was formed in 2014 by 100 producers to market their organic coffees. The association holds monthly workshops in organic fertilizers, fungicides, and insecticides so producers can make these essential products on their own farms. They also train on erosion mitigation and shade cover. 55% of producer members are women; This is great because there are some Cooperatives that require members to be land owners, who are typically men. We have been buying coffees from Asproguate for a number of years now because the quality is consistent.⁠
