Proof that it’s a great pizza? Here’s a hint: it’s in the bubbles. 🫧 When you find a few crispy bubbles popping up around the edge of your pizza, you know that the dough has been proofed to perfection. For us, we use a 24-48 hour cold fermentation process, but then we usually give the dough one last pop of warmth (over the oven or in the Colorado sunshine) before stretching it out on the table. When that pie lands on a hot oven floor, the air that’s trapped in the dough turns it into something quite impressive, as you can see here.
Had an awesome time serving up pizzas last night! For our upcoming weekend, we will be serving at private graduation events from Evergreen to Denver to Englewood, and beyond! Can’t wait to celebrate with all the grads!
