What you are seeing is attached to a pretty long story, so here goes. Y’all know we roast all of our own meats for our sandwiches. We use all natural products with none (or very little) additives. Recently it’s become almost impossible to find Turkey breast. Boneless or bone in. At least not at a price I can work with. So. I’ve taken to using my stash of frozen whole turkeys from my freezer. I stock up when they are on sale in the fall and winter. I butcher out the breasts while still mostly frozen so I can refreeze one and roast the other for sandwiches. Problem is…the rest of the turkey. So I make soups or a special salad. Well, today I stewed down the legs and thighs in a homemade BBQ sauce, pulled it all, and am stewing it down for sandwiches. That’s what you’re looking at. It’s deliciously messy and topped with grated cheddar on a wedge of our semolina bread spread with a spring leek and ramp aioli. Come. Give it a try.
