I’m so honored to be featured in Coulee Region Women’s Magazine and incredibly grateful for the opportunity to share a little of my story.
The La Crosse County Library provides so many wonderful opportunities for our community. Their bilingual storytime program opened my eyes to the need for sharing diverse foods and cultural experiences within the Hispanic community here in the La Crosse area. The encouragement and support I received from their staff gave me the push I needed to take that next step and start my business, El Coqui’s Kitchen.
Balancing a full-time job while running a business on the side definitely comes with its challenges. There have been many long days and nights spent on my feet prepping, sometimes with little to no sleep. But I continue to push through because of my amazing and loyal customers, as well as all the new faces I get to meet at every event.
I truly love what I do. I love sharing a piece of my upbringing, my culture, and the foods that are so meaningful to me with this community. It means more than I can put into words.
