Seems like a great time for a reintroduction to who we are!
Here at Roseanna’s, we serve homemade Italian comfort food. Emphasis on comfort. It’s not fancy or frilly. But it is rich in tradition and heritage. My great-grandpa came to the U.S. in the early 1900s with his parents from a region near the Amalfi Coast in Italy. As you can imagine, it is a lot different than landlocked Krebs, Oklahoma, so their food became different, too. Our recipes today are a reflection of what he and his family were able to create given the ingredients available. Meals were meant to feed hungry bellies of the family and later, the coal mining community. Then, you made do with what you had. No ordering ingredients in from out of the state or country. So today, we still keep it simple. The same simple pasta sauce. Same essentials like gnocchi, ravioli, lasagna, lamb fries and fried chicken.
Some say what we serve isn’t Italian food because it doesn’t look like other places or because we don’t have balsamic and oil for the bread. But that’s because they don’t understand our history. Krebs history. Here at Roseanna’s, we serve the comfort food of our region.
