There is a big difference between eating fast food and eating Chicago fast food. Around here, our local food stalls do not just serve meals.

They serve history wrapped up in grease-stained paper. If you grew up in this city, you already know that our food comes with a strict set of unwritten laws.

First, let’s talk about the hot dog stands. Rules 1, 6, and 11 are non-negotiable.

You never, ever put ketchup on a Chicago dog unless you want the guy behind the counter to judge you.

A real dog gets "dragged through the garden" with mustard, neon relish, onions, tomatoes, a pickle, sport peppers, and celery salt.

And if your fresh-cut fries aren’t dumped loose straight into the bottom of the brown bag, you are at the wrong joint.

Next up is the Italian beef. Rules 2, 3, 4, 5, and 15 form our holy truth. A real beef sandwich must be messy.

When you order it "dipped," that bread is taking a swimming lesson in the gravy boat. You have to know your exact order before you reach the window—wet, dry, sweet, or hot.

To survive the meal, you must use the famous "beef stance." You lean far over the counter with your elbows flared out to protect your shirt from grease.

And remember: never insult another person's favorite beef joint. Those are fighting words in Chicago.

Then there is the pizza truth that the rest of the world gets wrong. Rules 7 and 8 are facts.

Deep dish is a rare treat, not our daily meal.

Real locals eat thin-crust, tavern-style pizza cut into perfect squares. Everyone knows the crispy little corner pieces have their own fan club and always vanish from the box first.

Finally, the neighborhood vibes in rules 9, 10, 12, 13, 14, and 16 tie it all together.

A real gyro needs a mountain of extra napkins because the tzatziki sauce should be actively trying to escape the wrapper.

The smell of a Maxwell Street Polish sausage with grilled onions should hit your nose a block before you even see the stand.

We look for glowing neon signs because a legendary spot doesn't need to look fancy.

We will stand in long lines in the freezing cold, complaining about the wait the entire time without ever leaving.

Every single neighborhood has "the" spot that locals will defend like a sports team.

Because in the end, Chicago fast food isn't actually fast food—it is neighborhood history served in a paper wrapper.
