Korean Inspired Breakfast Kimchi-jjigae
Over the last few months I had a client requesting tofu kimchi-jjigae on a regular basis. I fell in love with this comforting and spicy dish.
In the process of using up bits and pieces in the fridge and was craving something spicy and full of vegetables this morning.
Not traditional, I loaded the broth with radish, bok choy, onion, carrot and zucchini. Finished off a jar of kimchi, poached local eggs and chives from the garden. 😋
