GROWIN OLDER BUT NOT UP...

67? How the hell did that happen? They've been trying to kill me for years but this crusty old goat carries on. My birthday hasn't been too kind lately. A few years ago, I had melanoma cut from my arm. During Covid, I was rushed in, once again on my birthday, to have my aorta replaced. I chose a pig valve (over a cow valve or a mechanical valve) and still feel somewhat guilty eating bacon. My pig was defective and required a pacemaker to operate correctly. Last year, on my birthday, I got news of a new skin cancer but this was "only" a basil cell melanoma.

The only problem so far today is my having to cook tonight. Let's hope that's the biggest problem I face.

I make a point of listening to Jimmy Buffet's "Trip Around The Sun" every year on my birthday and here are the lyrics...

LAND HO...

I have so many memories of my time at sea on the 60 foot ketch, High Flight, back in the early 80's. Enough time has elapsed that I could really use a fact checker ( MF or The Boozin Bosun out there?)

For example, did High Flight survive a hurricane off the coast of Mexico? What was the name of the Greek freighter that hit us in the Bay of Panama? Did we get shot at outside the Straw Market in Kingston, Jamaica while the Jamaican police cowered behind shelter? What island were we on when we dragged anchor and struck a bridge late one night? Confirmation of these events will result in more detailed stories.

One event that I remember, or think I remember, was first sighting Jamaica after a week at sea. I can't impress enough how exciting it is to see land after days at sea. "Land Ho" is a real and comforting phrase.

The problem is discerning land from the clouds on the horizon. You can spend hours clutching binoculars and trying to determine, land or cloud?

On one such occasion, we were all huddled on the deck, hopefully gazing into the distance, wondering if we were close to Jerk Chicken, Blue Mountain Coffee, Cold Red Stripe beer, Rastas and G***a. Yes? No? Maybe? The game played out incessantly.

I remember hearing a noise and glancing off our port was a 20-30 foot outboard boat colorfully painted in the colors of the Jamaican flag. Crewed by three rastas and a huge pile of lobsters. Things were looking up.

We'd been living off of oatmeal or extremely spicy Chili so a lobster meal seemed like a dream come true. Hastily, a trade was negotiated. Some of our warm Panamanian beer in exchange for lobsters galore.

It certainly seemed as if we were getting the better part of the deal and threw them a half dozen beers. It became apparent that they got the better part of the deal when they motored off without transferring any lobster.

As Jimmy Buffet would say we were rapidly "growing older but not up."

The only solace to all this was that we were definitely heading for Jamaica and not a cloud and that somewhere the rastas, under the scorching Jamaican skys, were drinking warm beer.

THE TETRIS OF COOKING...

For reasons beyond my control, or not, I've cooked 24 straight nights and I'm always amazed by how each night is like a show. Different, every night, sometimes good sometimes not.
There are ways you like to see things unfold... As an owner, you always want it to be busy, but not too busy, and busy in a manageable way.

In the restaurant/bar world you want "busy" to be consistent. Like gentle waves lapping at the shore. If the place fills up all at once and you've got 20-30 tickets up it can feel like a tsunami hit you. The head reels..."Which table is that Ribete for?" Pepe may ask. I stare at it, dumbly, which table? I don't even remember cooking it. "Why did you put cheese on the beans?" a server may ask. "I told you they have a dairy allergy."

To make things more difficult, one large table may order 4 steaks and 4 chops. I've got 3 spaces in the salamander and 5 available burners. That can be handled but what about the other 29 tickets?

Tonight we have an NBA game 5. A possible closeout game. But, you hope it's not as each game brings with it, it's own unique tsunami. So what's another week without a day off?

One thing I am starting to believe, or my sore back is starting to believe, this is a young man's game.

Bring on game 5...It's sure to be a tsunami.

USAAAAAAA... So the world cup is starting for the USA tonight and will be on all tv's at the Kensington Circus Pub. Game time is 6:00 PM. Music will start immediately after the game.
