Salmon doesn’t always need a hard sear.

For this one, I let it gently simmer in a smoky chipotle-adobo tomato broth with garlic, oregano, vinegar, and fresh lime. The salmon stays tender while the broth builds layers of smoke, acid, and warmth.

Served with buttery corn rice, cilantro, jalapeño, and plenty of that tomato-adobo broth.
