🥩FLAT IRON FRIDAY🥩

In the late 90's beef producers invested in research through their Beef Checkoff program to find more value in the beef carcass. Dr. Chris Calkins lead a team of researchers at the University of Nebraska-Lincoln to identify individual muscles in the chuck and round. One of the discoveries was the infraspinatus muscle which was later marketed as the Flat Iron steak. the late 90's beef producers invested in research through their Beef Checkoff program to find more value in the beef carcass.
