Hawaiian coffee beans are arguably the best in the world. The combination of volcanic soil, altitude, climate, and growing techniques produce low acidity in the bean. This characteristic creates smooth
flavor signatures and virtually no aftertaste. Roasting places the flavor signatures in perspective. The lightest roasts offer a weak and sometimes unrecognizable flavor signature. Darkest roasts place the flavor of the charred remains above the natural flavor of the bean, and the flavor signature becomes insignificant. Our artisan roasters have perfected roast profiles for each variety of bean. There are different profiles for Kona Typica and Kauai Typica, and different profiles for Peaberry, Regular and Decaf. These perfected roast profiles offer flavor signatures with depth: layered textures, undertones, and hints of natural/organic influences. Our product is grown, harvested, roasted, packaged and labeled in the United States. The only part of the process that is not performed in the USA is decaffeination which happens in Canada. The growers send the beans to British Columbia and then are shipped back to Hawaii after the decaffeination process is complete. We have decided not to blend or flavor our coffees. Each offering is a single origin: single variety from a single plantation. Blending is generally used to normalize (mute) or add (boost) the existing flavor characteristics of lesser quality coffee beans. Blends and inaccurate packaging labels have allowed profiteers to steal millions from the Hawaiian Coffee Growers.
