Today was harvest day at Finca Broadway.
I've been monitoring the ripening of the beans, and wanted to do a Tree Dried Raisin Natural Process this year. My friend Scott Reed told me about that Brazilian process years ago, and we did buy a few bags from him.
The branches today were so heavy with fruit, it was asking me to pick them. I thought last year's harvest was big. This year is larger.
Almost every bean was at the perfect ripeness. One of the branches had broken from the weight.
Selective picking was very easy. The pint glass on the right has the overripes, smaller beans, and some that look like were too close to my imitation sun.
In the real world at Origin, this tree would probably have been blown by wind and rain, knocking the beans from the tree.
I did leave a few green beans to continue to mature. They will most likely thrive without having to compete with the others I harvested.
The branches popped back to life, after working on this specimen for one hour.
Currently the beans are dry fermenting in a cold environment.
I still need to decide if this will be a pulped natural, or a fully washed micro lot.
