Meanwhile in Mexico our founder Christopher is spanning time with and to learn more about the supply chain in Coatepec and Puebla firsthand

We currently host a dynamic and classic profile from the Puebla Farmers Project for members of the Roasting Club and plan to feature some micro-lots through our retail shop Take Care later this year

We are fortunate to work with such passionate people from around the globe and are grateful for the opportunity to witness first hand the immense work that goes into producing specialty grade coffees

A lot of hours goes into hand painting a menu like this and we’re fortunate to have here in town to Take Care of Take Care

If you look closely you can see the original marks that outline the layout which we kept to indicate that a human who spent years working on their craft is responsible for this work

The “repairs” are updates that show how over time we have evolved and dialed in our offerings as we continue to hone our own craft of serving excellent coffee and food

2. New PEAK Drip is a Natural Gesha produced by Yeraldin Castro in Manzaneres, Colombia that was the winning lot from an internal competition I had the honor of being a judge at last year put on by our exporting partner

3. Carrot Cake Lattes are back for as long as you’ll keep buying them aka going on the menu for good

4. Blueberry Pie Lattes will be gone soon so try one out while you can

Another banger of a co-ferment from one of the greatest to produce some of the most unique and dynamic coffees we’ve ever had the pleasure of serving is back and available on Cold Brew starting this weekend

Red Honey Watermelon comes to us courtesy of Edwin Norena and is a blend of Caturra and Colombia varietals produced on located in Quindio, Colombia

The best way to describe the flavor profile is Insanely Sweet, Watermelon Forward and Tangy much like Watermelon Bubblicious Chewing Gum

We’ll have a limited amount of retail bags available as well and don’t foresee this limited offering lasting more than a few weeks

BLUEBERRY CO-FERMENT BLIRTHDAY

It’s my birthday tomorrow and to celebrate I wanted to release a very special and limited coffee from one of my favorite producers Edwin Norena of Finca Campo Hermoso in Quindio, Colombia

Edwin is a true flavor alchemist who’s Mossto Co-Ferment Process blew me away during my visit there in November of 2024 and we were fortunate to be able to purchase 25 Kilos of this gorgeous offering from him directly towards the end of 2025

We will have this on drip for one day only Wednesday February 18th and will be featuring the rest on Cold Brew and in RARE : Retail Bags while supplies last

Additionally we’ll have Blueberry Waffles on as a special bakery item and Blueberry Pie Lattes as our next seasonal syrup
