After a 12-hour smoking period, we remove the point and continue cooking for 3-4 hours, until the meat is tender enough for a pitchfork to spin freely. After removal, the meat is allowed to rest before excess fat is trimmed, yielding a true burnt end - characterized by fat distribution throughout the meat, not to be confused with an overcooked flat. The burnt end is then cut into cubes and presented to the customer.
