To honor my grandma, who inspired my love of baking!
Baking Powder Biscuits
Recipe by Joan Yakopatz
My grandma was the best cook in the world, and you can fight me if you don’t think so! She didn’t start out that way though. When she was first married, she once served her biscuits under done, and the doughy centers could be stretched across the table. I’m sure she was embarrassed by this misstep in the kitchen, but she soon perfected her recipes, using a pinch of this and a touch of that. When compelled to write down her biscuit recipe, this is what she wrote:
2 C. Flour
4 tsp. Baking Powder
1 tsp. Salt
1/3 C. Shortening
1 C. Milk
Sift together dry ingredients.
Cut in shortening.
Add milk and blend.
Knead about 30 seconds.
Pat out to 1” thick.
Cut with biscuit cutter.
Grease pan with bacon grease.
Let biscuits touch each other.
12 minutes 375° or golden brown.
If you use a 2” biscuit cutter you get about a dozen simple but delicious biscuits, ready for jam and butter, or your favorite sausage gravy!
