We got a message from the landlord this month.
We're not going to show you the whole thing.

But he said we owed our landlord $11,456.

We paid it. Savings and a credit card. We're clear.

We're telling you this for one reason: so you understand what running a small restaurant actually costs right now.

People see a $12 bowl and think we're getting rich.

Here's the truth.

Tomatoes cost more than meat some weeks.

Rent doesn't care how slow Tuesday was.

Every ingredient, every paycheck, every light in this building costs more than it did a year ago.

We fell behind in February. March was brutal. It's still hard.

We're four brothers running this place. And we made a choice early on:

We'd rather be fair than be comfortable.

So we keep our credit and bonus system going for our staff. We train them well. We push for good service so they earn better tips. Even when money's tight, we don't cut the people who show up for us every day.

That's not a complaint. It's just the reality nobody talks about.
