Friends! Just popping on to say the Dinner Program is still on pause while summer schedules are so crazy. I’m also in the process of rethinking some aspects of the program to make it even better for you as consumers! I want y food to shine, while also offering complete convenience, and lately I’ve started to think the integrity of my meals have gotten compromised with the current plan of upwards of 5 meals being delivered at a time.
In the meantime, I wanted to share a recipe for an absolutely incredible addition to your summer meals that is so so so easy! Homemade Pita Bread!
These pitas are perfect for your summer dinner table, as they don’t require an oven to cook, and can even be cooked on a grill if you’re as averse to warming your house in the summer as I am!
2 Tbs granulated sugar
1 Tbs active dry yeast
1 Cup warm water
2 tea salt
1 1/2 Tbs olive oil
3 Cups All Purpose flour
Whist together sugar, yeast, and warm water, in your stand mixer or a large bowl. Wait 10 minutes for yeast to wake up and bubble. Add the salt and olive oil and 2 cups of the flour. Mix on low until incorporated, and continue adding flour 1/4 cup at a time until the dough starts to pull away from the sides of the mixer or until it is no longer sticking to your hands if hand mixing. Continue to knead for 6 minutes. Coat the ball of dough in the mixing bowl with a LIGHT amount of olive oil, cover the bowl with a towel, and let rise for an hour until doubled in size. Once doubled, remove from bowl and cut into 10-15 equal sized pieces. Roll each piece into a small ball, cover again, and let rest for 15 mins. While resting, heat a cast iron skillet or grill to medium. Flatten each dough ball as thin as possible (about 1/4 in thick), with a rolling pin, and place dough onto skillet, one at a time, flipping after 20-30 seconds, or once bubbles have formed. Pitas are cooked and ready to enjoy when both sides have bubbled and gotten some golden brown color.
Enjoy these guys with some grilled chicken and a fresh cucumber, tomato, and feta salad. Yum!!!
