Friday, October 2nd, Pyramids Friday Fish Fry Friday with a taste of Lebanon🇱🇧🇱🇧🇱🇧Ethnic Dish Feature, COUSA MAHSHI (stuffed squash) with minced halal beef and tomato. Cousa is a light green summer squash that is cored and stuffed with minced beef or lamb and rice and is cooked in a rich tomato broth(banadoura)or yogurt sauce (labine). Cousa was another one of my favorite family meals that my Mom💗 made for us. It is a very popular Lebanese comfort food dish and is cooked throughout the Middle East. My grandparents started the tradition of growing cousa in their garden, my Dad and Mom planted it each summer and I follow that tradition of planting it each summer in our garden. This week I will be stuffing a small dark green squash (garden cousa season is done so the market it is ;) ) with minced halal beef, rice, spices, onion, rendered (ghee) butter and simmer it in a rich tomato broth served with a side of pita bread $22.
