Hi, I’m Olivia, the owner of Sunny Stacks Pancakes! 🥞☀️
Sunny Stacks was a hard right turn in my journey, but it has been one of the most rewarding turns I could have taken. Along the way, I’ve learned more than I ever imagined, had the opportunity to work alongside my family, and—most importantly—had the chance to meet so many of you.
I never imagined this little business would turn into such a special community here in Northern Colorado. Three years ago, I had never owned a business, never worked in the food industry, and had never even hitched or towed a trailer. Now, all of that has become my everyday life!
It is, without a doubt, the hardest work I’ve ever put forth (see the result in the last pic 🤣), but it has also been incredibly rewarding. So, thank you for helping make this dream—and this big risk—come to life. It truly means so much to me. ❤️
My favorite part of owning a food truck:
Meeting so many people I never would have crossed paths with otherwise. I’ve also loved learning about business by working so closely with my dad. The time I’ve gotten to spend with him through this journey has been invaluable.
And, on the note of family, seeing all of their support has meant more to me than I can put into words. From helping me come up with new recipes, to washing dishes, to making grocery runs for me—they’ve all found ways to show up and help make this dream possible. I’m incredibly grateful for them. ❤️
The most unexpected part of owning a food truck:
Just how much work goes into building a small business. If there’s one thing I’ve learned, it’s to SHOP LOCAL! The amount of work happening behind the scenes is extraordinary. So support your local businesses and send them a little extra love when you can. 🫶
