So years ago, something like 16, I went to a place called the "The Meatball Shop" and had these delicious Rueben meatballs. After a 16 year run in NYC, which is a great feat, they closed the last location this year.
Ssoooooo, I decided to do a Rueben meatloaf Rueben. Ground beef, chopped corned beef, egg, rye bread crumbs, Swiss, 1000, and seasonings are formed into a loaf and sliced. We griddle, top with house red cabbage kraut, more 1000 and Swiss on grilled rye.
Need I say, delicious?

Soooo, this dish below will morph into our version of teriyaki salmon. (It will take the place of our lemon pepper salmon.) For now it is making a guest appearance as a teriyaki salmon.
First thing we will sub out the brown sugar in our teriyaki with sorghum to create what we refer to as Kentucki-yaki. Second component is a kitchen sink jasmine rice cake. Sesame, Soy, Garlic, Scallions and whatever sink we have kicking around rolled in panko and wontons, lightly fried, finished in the oven and topped with a pan roasted salmon which is the thirdly and lastly we finish it with the Kentuckiyaki, cilantro, dried citrus and soon a dried pineapple salsa macha. (I have to order some dried pineapple cuz I really don't want to dehydra my own)

Ok, soooooo, today we're having a little fun with sweet potato tots. Some might drizzle with hot honey or marshmallow for a stepped up side but we decided on a dessert application.

Introducing Sweet Potato Tot Pie: Fritters Of seasoned Shredded Sweet Potato, Vanilla Gelato, Marshmallow Sauce, Toasted Coconut, Crushed Graham Cracker, Caramel, Pecans, Whipped Cream and Cinnamon.

Sweet Potato Tots Don't Have To Just Be A Side.

Sooooo, sometimes we do vanilla fried clams, just plain fried clams, sometimes we do them with cherry or banana peppers for RI fried clam strips. On some occasions we throw in pepperoni and zucchini straws for pizza maker clam strips. Today, we added some fresh okra and Cajun spice to the mix.

Introducing Zydeco Clam Strips and Okra: Lightly breaded with corn and wheat flour and fried crisp. Dusted with Cajun spices and served with fries, slaw, lemon and tarter. Envie!!!

Bubba's Hot Honey Fried Spareribs: The name comes from the type of whiskey we spritz our house rubbed and smoked spareribs with. We toss them in cornflour, fry and top with a drizzle with hot honey, chopped goobers, pickled onion and pickles.
