Ok, Tommorows I'd Smash That Twice Smash Burger is gonna be a classic. Introducing the LTOP Smash Burger: Griddled Potato Roll, HP Ketchup, 2x Bongard's American, 2x Smashed aBC'S Patty, Lettuce, Tomato, Onion & Pickle.

So there's this awesome steak Sauce called HP Sauce. We Take Equal Amounts Of Ketchup and HP (House Of Parliment) Sauce. It make a delicious burger condiment. A-1 can be substituted for the HP.

Introducing "I'd Smash That Twice": 2x Smashed aBC'S Patties, Caramelized Onions, Bongard's American, Sister Of KMM Sauce On A Griddled Potato Roll with Green Salt Shoestring Fries.

Notes: aBC'S (Brisket, Chuck, Shortrib. This is our beef grind)
Green Salt: We pulverize dried herbs, garlic powder, onion powder and salt to create green colored seasoning.

So sometimes I just do a thing so I can dub a entree by a certain name. A while back we did a risotto and topped it with our house half pound meatball and we called it "it rolled off the table...." named after that song about a meatball. Well, I made some square "meatballs" and I was going to type meatball with a cube root but instead we put them on Gorgonzola risotto and we named it "We Solved The Rolling Issue".

Sooooo, we have a rare treat coming Monday. We caught a glimpse of these coming out of the smoker. Almost never photographed in nature, these top sirloins were smoked to rare with charcoal. They will, obviously, go into making our South Of The North Shore Beef!!! Shaved Smoked Top Sirloin, Bongards American, St.James BBq Sauce, Mayonnaise & Crispy Onions On Griddled Brioche.
