Who says Aperol is just for summer?
We typically associate Aperol with warm weather, sunny afternoons, and spritzes. But its bittersweet orange character has a lot more versatility than we tend to give it credit for.
For our Unfinished Business, we wanted to take those familiar Aperol flavors in a different direction, pairing them with bourbon, pineapple, fresh lemon, and cinnamon simple syrup.
The bourbon brings warmth and depth, while the pineapple and lemon add a bright acidity that balances the bittersweet Aperol. The cinnamon ties everything together, giving the cocktail a subtle seasonal character without overpowering the other ingredients.
UNFINISHED BUSINESS
Aperol .5oz
Bourbon 1.5oz
Pineapple juice .5oz
Fresh lemon juice .5oz
Cinnamon simple syrup .5oz
Shaken with ice and served chilled.
