Pani means "water" in Hindi. This is a spicy take on water (also known as tikha pani), with a sweet chutney and a fiery touch (aka khatta meetha pani). The crispy, hollow, deep-fried puffed bread known as puri.
These hollow puris are filled with tikha or khatta meetha pani, a sprinkling of chopped coriander, and masala (made of boiled potato, black chickpeas, and spicy chutney), which is eaten straight away before the puri turns mushy and soggy.
