On a cold day like today, we here at The Salty Vine know that sometimes you just want to curl up and have a hot meal. Well instead of staying home come on in and try one of our pasta dishes, such as the Shrimp Diablo. This dish will make sure you get that heat that you’re missing from outside in here! Do you know the difference in scallops? Many people know there are different sizes but did you know there are two important differences in the quality of scallops? These two qualities are called wet and dry scallops in the food industry.

Wet scallops are seen more in restaurants due to their longevity. They get their name because they are infused and have been soaked in a bath of phosphates (or more precisely- sodium tripolyphosphate), for the purpose of adding water-weight and shelf life. There is nothing particularly wrong with scallops besides the fact they tend to not be as fresh.

Dry scallops are usually acquired through a diver or day boat then sent directly to the buyer. Natural scallops have a slightly tan, or "vanilla"-color due to them not being treated. Dry scallops are superior for the following reasons:
1. For searing purposes, dry scallops caramelize beautifully!
2. Dry scallops taste sweet & natural, where "wet" scallops can sometimes have a washed-out, or even slightly "soapy" or bitter flavor.
